Mutton Kabab

Mutton Kabab

Ingredients
Ground mutton - 2 lbs
Finely chopped onions - 1 large size
Green chillies - 10 finely chopped
Olive oil - 3/4 cup
Ginger - thumb size finely chopped
Garlic - 10 finely chopped
cilantro - small bunch finely chopped
Curry masala powder or kabab mix - 5 sp
Salt to taste

Method
1. Squeeze excess water from the mutton and grind in a mixie.
2. In container mix all the ingredients, the excess oil has to glaze for moisture.
3. Marinate this for 4 to 6 hours or overnight
4. you can make patties, balls or in skewers. let it dry for 30 minutes.
5. you can slow cook in a charcoal grill.
6. Garnish with cilantro and lemon juice - Serve hot !!

> Chef’s Tip : patties can be served with burger bun

Mini idli Manchurian

Mini idli Manchurian

Ingredients
Steamed mini idli - 4 cups
Ginger - thumb size
Garlic - 8 - 12
Red chily color powder - 1/4 tsp
Green chillies - 8 or 10
Onion - 1 big size
Tomato ketchup - 1/4 cup
Soy sauce - 5 sp
Ajinomoto - 1/2 tsp
salt to taste
Oil to deep fry

Method
1. Deep fry the mini idly and set a side.
2.Chop the onions, slightly bigger and ginger, garlic, green chillies finely
3. In a pan - add oil, onion, ginger, garlic and green chilly, red chilly color powder and fry them well.
4.. Then add soy sauce, Tomato ketchup and then add the fried mini idli and mix well.
5. Garnish with spring onions, and cilantro - serve hot !

Tip : you can also cut the regular idlis and make the above recipe.

Mushroom Manchurian

Mushroom Manchurian

Ingredients
whole baby mushrooms - 2lbs
Ginger - thumb size
Garlic - 8 - 12
Egg - 2
Maida flour - 1 cup
Corn flour - 4 tbs
Green chillies - 8 or 10
Red chilly powder - 2 sp
Onion - 1 big size
Tomato ketchup - 1/4 cup
Soy sauce - 5 sp
Ajinomoto - 1/2 tsp
salt to taste
Oil to deep fry

Method :

1. Mix Maida flour, Corn flour, salt, red chilly powder, egg and ajinomoto to the mushroom and marinate for an hour
2. Deep fry and set a side.
3.Chop the onions, slightly bigger and ginger, garlic, green chillies finely
4. In a pan - add oil, onion, ginger, garlic and green chilly fry them well.
5. Then add soy sauce, Tomato ketchup and then add the fried mushrooms and mix well.
6. Garnish with spring onions, and cilantro - serve hot

Cauliflower / Gobi Manchurian

Ingredients
Cauliflower florets - 3lbs
Ginger - thumb size
Garlic - 8 - 12
Egg - 2
Maida flour - 1 cup
Corn flour - 4 tbs
Green chillies - 8 or 10
Red chilly powder - 2 sp
Onion - 1 big size
Tomato ketchup - 1/4 cup
Soya sauce - 5 sp
Ajinomoto - 1/2 tsp
salt to taste
Oil to deep fry

Method :
1. Mix Maida flour, Corn flour, salt, red chilly powder, egg and ajinomoto to the slightly steamed cauliflower and marinate for an hour
2. Deep fry and set a side.
3.Chop the onions, slightly bigger and ginger, garlic, green chillies finely
4. In a pan - add oil, onion, ginger, garlic and green chilly fry them well.
5. Then add soya sauce, Tomato ketchup and then add the fried cauliflower and mix well.
6. Garnish with spring onions, and cilantro - serve hot

Maida flour - 1 cup
Corn flour - 4 tbs

Red chilly powder - 2 sp
Onion - 1 big size
Tomato ketchup - 1/4 cup
Soy sauce - 5 sp
Ajinomoto - 1/2 tsp
salt to taste
Oil to deep fry

Chilly Chicken

Chilly Chicken

Ingredients
Chicken - 1 ( Cut in small pieces )
Ginger Garlic paste - 3 sp
Black pepper - 1/2 sp
Red chilly Powder - 3 sp
Corn flour - 5 sp
Maida flour - 2 sp
Ajino moto - 1/4 tsp
Egg - 1
Yogurt - 2 sp
Vinegar - 1 tbsp
Red chilly color - 1/2 tsp
Salt to taste

Oil for deep fry

Method :
1. Mix all the ingredients and marinate at least 6 hours or overnight in the refrigerator
2. Deep fry in oil.
3. Garnish with spring onions, and squeeze fresh lemon for taste.
4. Serve hot.

Chicken Soup

Chicken Soup

Ingredients
Chicken - 1 Cut in small pieces
Onions - 1 small
Tomato - 2 large
Mustard seeds - 1 tsp
Dry red chillies - 3
Ginger - 1 medium piece
Garlic - 8 or 10 cloves
Black pepper - 2 sp
Cumin - 2 sp
Coriander seed - 1 sp
Chicken Broth - 1 can
Red chilly Powder - 1 sp
Turmeric Powder
Cilantro for garnish
Oil for saute
Salt to taste
Curry leaves

Method :
1. Grind Ginger, Garlic, Black pepper, Cumin, Coriander seeds to a paste in a mixie
2. Grind the tomatoes separately
3. In a pressure cooker add oil, mustard, curry leaves, dry red chilly, onion and saute well
4. Add the tomato puree and fry, until the oil get separated.
5. Now add the ground spice paste and fry well in a medium low flame.
6. Add chicken and toss it with turmeric powder, chilly powder and salt.
7. Then add Chicken Broth.
8. Pressure cook for three whistle
9. Garnish with finely chopped cilantro and serve hot

Chef’s tip : Use Cornish hen for better taste.

Mushroom Toast

MUSHROOM TOAST
Ingredients:

10 slices bread
1 pckt button mushrooms
1 tbsp butter
2 tsp flour
100ml milk
1 clove garlic
1 medium onion chopped..
salt and pepper to taste

Method:

  1. Slice bread and toast slightly
  2. Wash and slice mushrooms.
  3. Melt butter in a pan add chopped garlic, onions and saute for 2 minutes
  4. Add sliced mushrooms and saute till water dries.
  5. Add the flour and cook for 2 minutes
  6. Add milk and stir till you get a thick consistency
  7. Season with salt and pepper
  8. Spread on toasted bread and serve hot
