Sura Puttu

Sura Puttu

Ingredients
Shark fillet - 2 lbs
Turmeric powder -1 tsp
Salt to taste
Onion - 2 large size
Garlic - 2 large size pods
Green chillies - 10
Mustard seed - 1 sp
Curry leaves - 2 stick
Oil to fry

Method

1.slice the shark in big pieces
2. Bring 4 cups of water in a large sauce pan to boil
3. Add shark, salt and turmeric powder cover and cook for 10 ~ 15 minutes
4. When shark is well cooked, remove the fillet from the water.
5. As it cools, using a fork shred the fillet.
6. In a nonstick pan add oil, mustard, onion, curry leaves, garlic, green chillies, little salt and saute in slim flame
7. Then add the shredded fish and mix well cook for five minutes.
8. Garnish with cilantro


Chicken Chukka Varuval

Chicken Chukka Varuval

Ingredients
Chicken - 1
Onion - 1 large size finely chopped
tomato - 1
Mustard seeds - 1 sp
Ginger garlic paste
Curry leaves
Turmeric - 1 tsp
Kari masala powder - 5 sp
Black pepper powder - 2 sp
Cilantro
Oil to fry

Method

1. In a pan add oil, mustard seeds, onions, curry leaves and fry well
2. Then add tomato, ginger garlic paste and fry well.
3. Add chicken, turmeric, kari masala, and salt.
4. Add water as required and cook well done.
5. Then add freshly ground black pepper and cilantro


Chicken Kabab

Chicken Kabab

Ingredients
Ground chicken - 2 lbs
Finely chopped onions - 1 large size
Green chillies - 10 finely chopped
Olive oil - 3/4 cup
Ginger - thumb size finely chopped
Garlic - 10 finely chopped
cilantro - small bunch finely chopped
Curry masala powder or kabab mix - 5 sp
Salt to taste

Method
1. Squeeze excess water from the chicken and grind in a mixie.
2. In container mix all the ingredients, the excess oil has to glaze for moisture.
3. Marinate this for 4 to 6 hours or overnight
4. you can make patties, balls or in skewers. let it dry for 30 minutes.
5. you can slow cook in a charcoal grill.
6. Garnish with cilantro and lemon juice - Serve hot !!

> Chef’s Tip : patties can be served with burger bun


Turkey Kabab

Turkey Kabab

Ingredients
Ground turkey - 2 tube
Finely chopped onions - 1 large size
Green chillies - 10 finely chopped
Olive oil - 3/4 cup
Ginger - thumb size finely chopped
Garlic - 10 finely chopped
cilantro - small bunch finely chopped
Curry masala powder or kabab mix - 5 sp
Salt to taste

Method

2. In container mix all the ingredients, the excess oil has to glaze for moisture.
3. Marinate this for 4 to 6 hours or overnight

Butter Chicken

Butter Chicken

Ingredients
1.Boneless chicken - 2 lbs
2. Ginger garlic paste - 4 sp
3. Cinnamon - 1 medium size
4. Cloves - 3
5. Cumin powder -1 sp
6. Red chilly powder - 2 sp
7. garam masala - 1 sp
8. tomato - 4
9. Onion - 1 big size
10. Capsicum - 1
11. cashew - 1/4 cup
12. Butter - 3/4 stick

Oil to fry
Salt to taste.

Method

To the chicken, add little ginger garlic paste, salt, red chilly powder, and red chilly colour and marinate for 4 to 6 hours and deep fry or shallow fry or grill in a skewers - rightly cooker.

1. Soak the cashew and grind to a fine paste in a mixie
2. Stem the tomatoes and peel the skin and puree it in a mixie
3. In a pan add butter, cinnamon, cloves, then thinly sliced onions, capsicum, ginger garlic paste, add garam masala, cumin powder, red chilly powder and fry well
4. Then add tomato puree. cashew paste and make to a thick gravy.
5. Now, add the cooked chicken and bring it to a boil.
6. Garnish with cilantro. Serve with nann or parotta


Pepper Chicken

Pepper Chicken

Ingredients
Chicken - 2 lbs
Onion - large size
Tomato - 2 medium size
Ginger garlic paste - 2 tsp
Black pepper - 2 sp
Fennel Seeds - 1 sp
Cinnamon - 1 medium size piece
Red chilly powder - 1 sp
Turmeric powder - 1/4 tsp
Oil to fry
Salt to taste

Method

1. Dry roast fennel seed and black pepper and grind to a fine powder.
2. Chop the onions and dice the tomatoes.
3. In a pan add oil, cinnamon, onion, tomato, ginger garlic paste, red chilly powder, turmeric.
4, Fry well and then add chicken and salt
5. If required add water and cook the chicken well
6. Finally add fennel seed and black pepper powder. Serve hot !!


Raita

Raita

Ingredients
Curd / yogurt - 3 cups
Cumin seeds - 2 sp
Green chillies - 3
Mint - few leaves
Cilantro - 2 stems

Method
1.Grind Cumin seeds, Green chillies, Mint, and Cilantro to a paste
2. mix the paste to the yogurt and whip in a mixie
3. You can add chopped cucumber, or sliced onion or grated carrot, or chopped tomato or all !!


Tandoori Chicken

Tandoori Chicken

Ingredients
Chicken - cut in large size or Chicken drumstick
Ginger - thumb size
Garlic - 10
Raw papaya - 1 ” x 1″ piece
Curd - 4 sp
Red chilly powder - 2 sp
Garam masala - 1 sp
Red color powder 1/4 tsp
salt to taste.

Method
1. Grind ginger, garlic and raw papaya to a paste in a mixie
2. To the chicken add the paste and rest of all ingredients and mix well
3. Marinate the chicken for atleast 6 hours or overnight.
4. You can deep fry the chicken or cook on the charcoal grill.
5. Serve with lemon and raw onions.


Mushroom Manchurian

Mushroom Manchurian

Ingredients
whole baby mushrooms - 2lbs
Ginger - thumb size
Garlic - 8 - 12
Egg - 2
Maida flour - 1 cup
Corn flour - 4 tbs
Green chillies - 8 or 10
Red chilly powder - 2 sp
Onion - 1 big size
Tomato ketchup - 1/4 cup
Soy sauce - 5 sp
Ajinomoto - 1/2 tsp
salt to taste
Oil to deep fry

Method :

1. Mix Maida flour, Corn flour, salt, red chilly powder, egg and ajinomoto to the mushroom and marinate for an hour
2. Deep fry and set a side.
3.Chop the onions, slightly bigger and ginger, garlic, green chillies finely
4. In a pan - add oil, onion, ginger, garlic and green chilly fry them well.
5. Then add soy sauce, Tomato ketchup and then add the fried mushrooms and mix well.
6. Garnish with spring onions, and cilantro - serve hot


Cauliflower / Gobi Manchurian

Cauliflower / Gobi Manchurian

Ingredients
Cauliflower florets - 3lbs
Ginger - thumb size
Garlic - 8 - 12
Egg - 2
Maida flour - 1 cup
Corn flour - 4 tbs
Green chillies - 8 or 10
Red chilly powder - 2 sp
Onion - 1 big size
Tomato ketchup - 1/4 cup
Soya sauce - 5 sp
Ajinomoto - 1/2 tsp
salt to taste
Oil to deep fry

Method :
1. Mix Maida flour, Corn flour, salt, red chilly powder, egg and ajinomoto to the slightly steamed cauliflower and marinate for an hour
2. Deep fry and set a side.
3.Chop the onions, slightly bigger and ginger, garlic, green chillies finely
4. In a pan - add oil, onion, ginger, garlic and green chilly fry them well.
5. Then add soya sauce, Tomato ketchup and then add the fried cauliflower and mix well.
6. Garnish with spring onions, and cilantro - serve hot
